The Role
Manage Daily Kitchen Operations
· Ensure that all product is being prepared consistently to Gusto standard
· Maintain up-to-date recipes for all menu items, ensure recipes are used at time of preparation
· Manage POS and system updates with General Manager
· Oversee BOH equipment maintenance
· Follow and enforce all restaurant policies and procedures
· Present on line during service as Expo or Float
· Maintain pristine working conditions for BOH
Controlling Profit and Loss
· Review and evaluate supplier pricing every 6 to 12 months alongside General Manager
· Maintain optimal labour percentages; oversee BOH scheduling, avoiding overtime
· Maintain optimal food cost
· Ensure par ordering levels are maintained and all incoming stock is checked
· Oversee inventory reporting and address any variance
· Meet established targets on COGS
Hiring and Retaining Awesome Team Members
· Hiring and training top talent for all BOH positions
· Follow onboarding procedures, setting up new employees for success
· Lead ongoing training & development of employees
· Foster an environment for happy people making people happy
· Developing Sous Chefs and cooks to become a future leader within the company
Evaluates and Collaborates on Menu development
· Work alongside Executive Chef for seasonal menu changes
· Revise menu as needed, as approved by Executive Chef
· Coordinate with General Manager on any new menu item roll-outs
Maintain Safe Workplace
· Ensure BOH representation in Health & Safety Meetings
· Enforce safe food handling policies and procedures
· Manage in compliance with workplace harassment and violence policy
Who You Are
The right person for this role has a strong culinary leadership background and prioritizes both guest and team member experience. The ideal candidate is equal parts people and process- driven with an aptitude for creating efficiencies at all levels of the business.
Preference will be given to those who possess:
- Exceptional leadership and communication skills
- Minimum five (5) years culinary management experience in a high-volume environment
- Strategic, entrepreneurial and innovative thinker
- Valid First Aid, Smart Serve, WHMIS Certification
- Passionate, positive, and approachable
